Pancake Art

I love making pancakes. It’s normally a saturday morning tradition around here. I made this special pancake this morning for my daughter Erin – just to see if I could. I think the reason I like making pancakes so much is that it took me so long to perfect it. I have it down to a science of the right batter mixture for the right consistency, the right type of butter on the right temperature pan. My dad’s special breakfast that he made us as kids was really good waffles on his waffle iron. I don’t have a waffle iron myself but I will someday, once I think I’m ready to advance my skills in the Saturday morning kitchen.

So, this may be giving my secret away, but do you make pancakes from scratch, or does your recipe involve “Bisquick?”
I’ve tried both, and I think I prefer Bisquick just for the convenience and the consistently good results.
This post makes me think that tonight might be another “Breakfast for Supper” night at the KB house!

I have made pancake batter from scratch before, but I have also come to accept the modern convenience of Bisquick. However, I no longer follow their recommended instructions word-for-word.

I’ve found a little extra milk, and a teaspoon or two of baking powder (and sometimes) some powdered sugar make the “cakes de pan” infinitely better than the back-of-the-box recipe…lighter and airier, and deliciouser.

Yeah, I usually drop some pure sugar into the mix too, but haven’t recently because I don’t think a 1 year old should ingest that much sugar like her old man can! And yes, a bit more milk can be very helpful.
